🦞 Butter-Poached Lobster

Butter-poached lobster is a classic fine-dining dish where lobster is gently cooked in warm butter so it stays incredibly tender, juicy, and rich.


🧈 Ingredients

  • Lobster (tails or whole lobster meat)
  • Butter (unsalted, a lot of it)
  • Salt (to taste)
  • Optional: garlic, lemon juice, fresh herbs (tarragon, parsley), pinch of chili flakes

👩‍🍳 How it’s made

1. Prepare the lobster

  • Remove meat from shell (or use tails only)
  • Pat dry gently

2. Melt the butter gently

  • Heat butter on very low heat
  • You want it warm and liquid, not sizzling or browning

3. Poach slowly

  • Add lobster to the warm butter
  • Keep temperature low (around 55–60°C if controlled)
  • Cook gently until lobster turns opaque and tender (usually 5–10 minutes depending on size)

4. Season

  • Add salt, a little lemon juice, and herbs at the end
