🍔 Kooleen-Style Sloppy Joe Meatloaf

🧾 Ingredients
Meatloaf:
- 1 kg ground beef (or mix of beef + pork)
- 1 small onion, finely chopped
- 2–3 garlic cloves, minced
- 1 egg
- 1 cup breadcrumbs
- 1/3 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tbsp Worcestershire sauce
Sloppy Joe topping:
- 1 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp mustard
- 1 tbsp Worcestershire sauce
- 1 small onion, finely chopped (optional)
- Chili flakes (optional, for heat)
🍳 Instructions
1. Make the meatloaf base
- Preheat oven to 180°C (350°F)
- In a bowl, mix ground meat, onion, garlic, egg, breadcrumbs, milk, and seasonings
- Shape into a loaf and place in a baking dish
2. First bake
- Bake for 30–35 minutes until partially cooked
3. Make sloppy joe sauce
- In a pan, mix ketchup, brown sugar, mustard, Worcestershire sauce
- Simmer for 3–5 minutes until slightly thickened
4. Add the “sloppy” layer
- Pour sauce generously over the meatloaf
- Return to oven and bake another 20–25 minutes
5. Rest & serve
- Let it rest 10 minutes before slicing
- Serve with mashed potatoes, buns, or rice
