🍲 Pot Roast with Potatoes & Onions (Tender, Slow-Cooked Classic)

Pot roast is a comforting one-pot meal where beef becomes soft, juicy, and flavorful as it cooks with potatoes and onions.


🧂 Ingredients

  • 1.5–2 kg beef chuck roast
  • 2–3 tbsp oil
  • 1 large onion (sliced or quartered)
  • 4–5 potatoes (chunked)
  • 3–4 garlic cloves (minced)
  • 2 cups beef stock or broth
  • 1 tbsp tomato paste (optional but adds depth)
  • 1–1.5 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme or mixed herbs
  • 1–2 bay leaves

🔥 Instructions

1. Brown the beef

  • Heat oil in a heavy pot
  • Sear beef on all sides until browned
  • Remove and set aside

2. Build flavor base

  • In the same pot, sauté onions and garlic
  • Stir in tomato paste briefly

3. Add liquid & seasonings

  • Return beef to pot
  • Add broth, herbs, salt, pepper, bay leaves
  • Bring to a gentle simmer

4. Slow cook

  • Cover and cook on low heat (or oven at 160°C / 325°F)
  • Cook for 2.5–3.5 hours until beef is tender

5. Add vegetables

  • Add potatoes in the last 45–60 minutes
  • Cook until soft and infused with flavor

  • Rich onion-based sauce
