Bacon Cheeseburger Meatloaf

Ingredients:

  • 1½ lbs ground beef
  • 1 cup shredded cheddar cheese
  • 6–8 slices bacon
  • 1 cup breadcrumbs (or crushed crackers)
  • 1/2 cup milk
  • 1 egg
  • 1 small onion, finely chopped
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • Optional: ketchup or BBQ sauce for topping

Instructions:

  1. Preheat oven: 350°F (175°C).
  2. Prepare meatloaf mix:
    • In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic powder, salt, and pepper. Mix until just combined.
  3. Add cheese:
    • Fold in shredded cheddar cheese.
  4. Shape and wrap:
    • Shape mixture into a loaf on a lined baking sheet or in a loaf pan.
    • Lay bacon slices over the top, tucking ends underneath.
  5. Bake:
    • Bake 50–60 minutes until meatloaf is cooked through (internal temp 160°F / 71°C).

  6. Rest & serve:
