Ingredients (for one 9-inch cake)

  • 1 box yellow cake mix (or homemade yellow cake batter)
  • 1 cup pineapple juice (not from concentrate)
  • ½ cup vegetable oil
  • 3 large eggs
  • 1 tsp vanilla extract
  • Optional: ½ cup crushed pineapple for extra texture

For the glaze (optional):

  • ½ cup powdered sugar
  • 1–2 tbsp pineapple juice

Instructions

  1. Preheat Oven
    • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
  2. Mix Cake Batter
    • In a large bowl, combine the cake mix, pineapple juice, oil, eggs, and vanilla.
    • If using crushed pineapple, fold it in gently.
  3. Bake
    • Pour the batter into the prepared pan.
    • Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  4. Cool & Glaze
    • Let the cake cool for 10–15 minutes in the pan, then transfer to a wire rack.
    • For the glaze, mix powdered sugar with pineapple juice until smooth. Drizzle over the cooled cake.
