🍑 Classic Peach Cobbler Pie

📝 Ingredients:

For the filling:

  • 5–6 fresh peaches (peeled & sliced) (or 4 cups canned, drained)
  • ¾ cup sugar
  • 2 tbsp brown sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ¼ tsp nutmeg (optional)
  • 2 tbsp cornstarch

For the topping:

  • 1 cup all-purpose flour
  • ½ cup sugar
  • 1½ tsp baking powder
  • ¼ tsp salt
  • ½ cup milk
  • ½ cup butter (melted)

🍳 Instructions:

  1. Preheat oven
    Set your oven to 180°C (350°F).
  2. Prepare the peaches
    In a bowl, mix peaches with sugar, brown sugar, lemon juice, vanilla, cinnamon, nutmeg, and cornstarch. Stir well.
  3. Make the topping batter
    In another bowl, combine flour, sugar, baking powder, and salt. Add milk and mix until smooth.
  4. Assemble
    • Pour melted butter into a baking dish
    • Spread the batter evenly over the butter (don’t stir)
    • Spoon the peach mixture over the batter (again, don’t mix)
  5. Bake
    Bake for 40–45 minutes until golden brown on top.

🍽️ Serving Ideas:

  • Best served warm
  • Add a scoop of vanilla ice cream 🍦
  • Or a dollop of whipped cream

💡 Tip: As it bakes, the batter rises around the peaches to create that classic cobbler texture—crispy on top, soft underneath!
