Cowboy Soup

Here’s a simple, hearty version of Cowboy Soup—perfect for a quick, filling meal: 🥣🤠


Ingredients (serves 4–6)

  • 1 lb (450 g) ground beef or turkey
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes
  • 4 cups beef or chicken broth
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt & pepper to taste
  • Optional: shredded cheese, sour cream, or chopped cilantro for serving

Instructions

  1. Cook the meat: In a large pot, brown the ground beef with onion, bell pepper, and garlic until fully cooked. Drain excess fat.
  2. Add veggies & beans: Stir in black beans, kidney beans, corn, and diced tomatoes.
  3. Add broth & spices: Pour in broth, add chili powder, cumin, salt, and pepper. Stir well.
  4. Simmer: Bring to a boil, then reduce heat and simmer for 20–25 minutes to let flavors meld.
  5. Serve: Top with cheese, sour cream, or cilantro if desired.

💡 Tip: For extra heartiness, add diced potatoes or cooked rice. Leftovers taste even better the next day!
