🥕 Ingredients:

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg (optional)
  • 1/2 cup vegetable oil
  • 1/2 cup melted butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut (optional)
  • 1/2 cup chopped walnuts or pecans (optional)

🍰 Instructions:

  1. Preheat oven: 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. Mix dry ingredients: In a bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
