For the base:

  • 1 lb ground beef (or ground turkey)
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt & pepper, to taste
  • 1 cup shredded cheddar cheese

For the cornbread topping:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/4 cup melted butter or oil
  • 2 large eggs

1. Prepare the filling

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef with onion and bell pepper until browned.
  • Drain excess fat.
  • Add corn, black beans, chili powder, cumin, salt, and pepper. Mix well.
  • Transfer mixture to a greased 9×13-inch baking dish.
  • Sprinkle cheddar cheese evenly on top.

2. Make the cornbread topping

  • In a bowl, mix cornmeal, flour, sugar, baking powder, and salt.
  • Stir in milk, melted butter, and eggs until smooth.
  • Pour batter evenly over the beef mixture.

3. Bake

  • Bake 25–30 minutes, until cornbread is golden and a toothpick comes out clean.

4. Serve

  • Let cool slightly, then scoop into servings. Optional: top with sour cream, salsa, or chopped green onions.
