Instructions

  1. Bake the cake:
    • Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
    • In a large bowl, mix flour, sugar, cocoa, baking powder, baking soda, and salt.
    • Add buttermilk, oil, eggs, and vanilla. Mix until smooth.
    • Gradually add hot water or coffee, mixing until well combined. Batter will be thin.
    • Divide evenly between pans and bake 30–35 minutes, or until a toothpick comes out clean. Cool completely.
  2. Make the coconut filling:
    • In a bowl, mix sweetened condensed milk, shredded coconut, and vanilla. Set aside.
  3. Make the ganache:
    • Heat heavy cream until just simmering. Pour over chopped chocolate in a bowl. Let sit 1–2 minutes, then stir until smooth. Add butter if using.
  4. Assemble the cake:
    • Place one cake layer on a serving plate. Spread the coconut filling evenly on top.
    • Place the second cake layer over the filling.
    • Pour ganache over the top, letting it drip down the sides.
  5. Chill and serve:
